Well with starches you can basically go to any pasta ever. With a simple cream sauce of garlic, white wine, mustard and cream, maybe mushrooms if you can sort those out and some protein.
Oh! This is my favourite comfort food recipe, my mum would make it all the time for me.
Swiss chicken
Ingredients (serves 4)
2 tablespoons plain flour
4 chicken breasts fillets, skin on
90g butter
1 garlic clove, crushed
3/4 cup dry white wine
8 slices ham
8 slices Swiss cheese
1 teaspoon French mustard
1/2 cup cream
3 green onions, thinly sliced
steamed vegetables, to serve
Method
Preheat oven to 180∞C. Season flour with salt and pepper. Coat chicken breasts lightly with seasoned flour.
Melt butter in a non-stick frying pan over medium heat. Add garlic and chicken. Cook chicken for 2 to 3 minutes each side, or until golden. Add wine. Bring to the boil. Reduce heat to medium-low. Simmer, covered, for 15 to 20 minutes or until chicken is just cooked through. Remove chicken to a heat-proof dish.
Place ham and cheese on top of chicken. Bake for 10 minutes or until cheese has melted.
Meanwhile, boil wine mixture in frying pan over high heat until it has reduced by half. Reduce heat to medium. Add mustard, cream and onions. Cook, stirring, for 2 minutes. Place chicken onto serving plates. Spoon over sauce and serve with steamed vegetables.
This is probably my favourite soup at the moment.
carrot and ginger soup
4 (small) portions:
500 g of carrots
1 onion
2 medium potatoes
2 chopped cloves of garlic
2 tea spoons of minced ginger
1 ml (like a pinch or two. I don't know the correct US measurement for it) of ground cayenne pepper
1 ml of turmeric. Mostly for coloring, skip it if you don't have it.
8 dl of vegetable or chicken stock (I prepare it from water and stock powder)
1 lime
Turkish yogurt
Peel and chop the vegetables and saute them for a few minutes.
Add garlic, ginger, cayenne and turmeric. Saute for a few more minutes.
Add the stock and boil for maybe 15 minutes until the vegetables are soft.
Run the whole thing through a blender, add the lime juice and some salt and black pepper to taste.
Serve with a scoop of Turkish yogurt (or creme fraiche) (oh hey, pip is right, that is how you spell fraiche)

You can put in any protein you want (or none works too)

Rice
Eggs
Soy sauce
olive or vegetable oil
Optional but recommended ingredients
onions (i use green onions / scallions)
mushrooms
peas
carrots
corn or baby corn
chicken / shrimp / crab / etc - just cook until barely ready (make sure chicken is done, for the other ingredients you can leave them a bit under because they'll cook more in the pan).
Directions
Cook rice according to instructions. I usually use 2 or 3 cups of rice (to make 4 - 6 cups), because I eat it for several days.
While it is cooking (or after if you can't multitask), cook other vegetables/things you want in it.
Recommended
Onions + mushrooms: cook together on medium until onions are translucent (5-7 minutes)
Peas + carrots: cut the carrots into segments. I recommend using baby carrots. They're easier and require less effort. Frozen peas are 100% ok. Cook on medium until carrots are only slightly snappy (4-6 minutes)
Baby corn: Can get it jarred or fresh. Very cheap and tasty. Cook over medium for 3-5 minutes just until a bit cooked. If they start to char, remove from heat.
Required
Eggs: scramble them and liberally add salt and pepper. Cook in a spatula, stirring regularly. Remove BEFORE fully cooked. You want it to be wet not dry/overcooked. I usually use 3-5, but more or less is ok to taste.
Finally, start by adding some of the oil to a wok or your largest skillet and heat over medium-high heat.
After heated, add the rice. Stir frequently. Add soy sauce liberally, making sure to mix frequently.
After 3-4 minutes, add the vegetables. Continue cooking and stirring.
Add any protein you made (chicken/shrimp/crab/etc). Continue cooking and stirring.
Finally add the eggs. Mix well and cook for 1-2 minutes more, then serve.
The most important thing is to keep stirring so the bottom doesn't burn and to keep tasting.
If it needs salt, pepper or soy sauce, add it!

I am working on 2 projects this week:
Good home made sliders, and new york pizza. Letting the dough rise tonight for the pizza. I have a feeling the latter is an impossibility to get perfect though.
Fried rice and all stir fry is so much more fun with a wok. But I have a stupid electric stove now, so the big ass frying pan is way more practical. I miss that satisfying wrist action, and pretending like I am a better cook than I am because I can make food fly around.

In more news related to what I just said: I walked back to my hotel and proceeded to blow chunks. Fuck you faux-swiss joint in a mall in south east asia. Fuck you, indeed.

There's one that's a version of St. Louis' own Red Hot Riplets with a guy from St. Louis on the cover. The phrase they used on that one was "Pimp Education" which works on so many levels.

Ok, newly repaired digestive system. Can start crossing off foods to NEVER EAT AGAIN as I go because dear God the pain.
I went for lazy, wings from Buffalo Wild Wings and it destroyed me.
I really wish there were more delicious places around here that I knew about. BUT. I. DON'T. Or there aren't any nearby. If I'm gonna drive thirty or forty minutes to pick up take-out I can basically muster the energy to throw shit on a skillet.
I need a new recipe or idea to try out that I can make in my limited kitchen.
I also have chron's and basically the only thing I actually cook for myself these days is sushi. Its real easy to get down, there are as few ingredients as you want and if you are feeling shitty you can take long breaks in between actually doing anything to make it (ie put rice in cooker, take break, take rice out of cooker, break for it to cool, make food, possibly break because it is cold anyways, eat). Also its small discrete portions so you can eat as little or as much as you want (I find if I fill my plate up with something normal I overeat and pay for it later). I usually just make a spicy tuna salad with canned tuna to put in it but that is because I am lazy and cant be bothered to keep real ingredients in the fridge. You can do a lot more if you want. It's way easier than people think, I learned how to do it here but there are a bunch of sites around the internet that are good.
