The supreme confidence with which some people tell me I should just update to Windows 10 because it's objectively better and problems are practically non-existent is belied by the sheer number of stories of things going wrong for [chat] people who have made the upgrade.

I'm trying to find the recipe I adapted for mine, but I can't find it.
Almost all start with soaking the cabbage in salt water, then rubbing it down with a seasoned paste and storing it to ferment.
In my case I used miso paste and anchovies to give it a good funky flavor.
