AoT definitely improves a lot with the anime adaptation, I must say.
I was noticing the studio transition more this episode with the animation. Not terrible or anything, but some mildly jarring moments of "yep, that's low frame rate CG all right". I do wonder if Mappa is going to try and pull off any sasuga moments like Levi fleeing through the streets in early season 3 and what those will look like
My surely-spicy anime hot take: First Gundam is... very good. Despite the rushed schedule it manages to tell a wonderful story with amazing characters. Also, ya know, wow cool robot!
(I just finished rewatching it after seeing it in the early 2000s. I feel like I appreciate its themes and characters a lot more.)
First Gundam is mostly stand-alone episodes with the real meat of the plot shoved into the last six episodes.
Like, it's extremely watchable but the more complex politics and themes explored in the sequels are only possible by having planned, arching storylines that take place in planned arcs.
That said it does often seem like Gundam series always forget to get their most important thesis statements out there until the last few episodes and then are like "shit let's cram all this stuff in the end." Though that does seem to kind of be an anime thing in general and not something exclusive to Gundam.

They make really slick use of CGI in wide shots and where it’s hard to make out detail, which is good! They use real ass animation for the good shit.

Also I randomly checked out Cutie Honey Flash from 1998, and boy does it remind me of early Sailor Moon where she uses the disguise pen constantly. You might be interested! For anyone else that knows Cutie Honey, you probably already immediately know if you'd be interested or not.
I also tried the LBX girls anime that seems like it'd be pretty mediocre, and some old anime nobody probably cares about. And now I'm caught up!

First Gundam is the story of the "One Year War". Describing the progression of that war as "filler adventure" suggests you kind of don't know what you're talking about? Would you describe Legend of Galactic Heroes as 90+ episodes of filler adventure?

I'll grant that the specific loadouts of certain encounters (fencing robot in particular stands out here) were clearly designed to sell model kits or toys or whatever was the fashion at that time, but the plot never really grinds to a halt that I remember in particular. They're trying to get to Earth, then to Operation Odessa, then Jaburo, etc.
The middle of Gundam has a bunch of stuff that's really great, such as Rambo Ral, Lieutenant Matilda, a bunch of character development... and admittedly the same transformation sequence 10 episodes in a row.
Zeta Gundam has several story arcs with as much "big picture" things happening in it as the entirety of OG Gundam... and it still has a bunch of episode that drag unnecessarily.
Like, do we really need five different episodes about whether or not Fa can actually cut it as a pilot? (The answer is, yes, she can actually, if Tomino would just let a woman be competent without being evil or doomed for once in his life.)
Honestly an issue with a lot of older Gundam series is that they have too many episodes, resulting in uneven pacing and stutter-step characterization.

there's issues with the pacing or writing you could talk about in zeta but i wouldn't put the bulk of the episodes being 'aimless' or 'filler' anywhere in that list

I'm only halfway through ep 1 of Wonder Egg Priority and this show is ba na nas
Also the color palette and animation is just lovely, it looks fantastic, someone's spending money on this show. It feels kinda like a darker version of Flip Flappers?
Also it is uh, soo many trigger warnings!
- main character is a high school (middle school?) dropout who was already a bullying victim and then her best friend committed suicide
- There's a very flirty vibe between her and her friend that makes me suspect her friend may have been outed and bullied, and that's what resulted in her suicide. Especially considering the main character's deep sense of guilt and grief.
- she's traveling around in a weird dream world with other fellow dreamers who, it is implied, are all either other suicide victims or people who are totally alone?
- if you get hurt in the dream world you get hurt in real life, and ep 1 ends with the main girl passing out stabbed, and her mom crying over her in the hospital
Despite that list of horrors the show doesn't really feel edgelordy, but I am a bit worried it's gonna get Too Anime for how dark and psychological it is. But I'm definitely gonna be watching ep 2

Been reading this for a while, and it's quite funny, in a deadpan, deliberately uncomfortable way. Like they make no bones about how robotic she is; made of hard metal, very limited ability to emote, specialized in cooking and kind of poor at other things. It's interesting.
