Trent Reznor has gone on record saying, "well, it's not my song anymore"
The highest possible praise.
It's rare with covers. Sometimes out of pettiness (doubly so since with the absolute shit show that music rights are a lot of artists didn't get a say in the matter) but usually just because the original artist heard it thousands of times as it came together and it's really hard to hear a song and have it deviate from your expectations, it just sounds wrong every time a cover singer hits a note different.
I think even higher praise than Trent Reznor had for Johnny Cash is what Bob Dylan did after Jimi Hendrix covered All Along the Watchtower. He didn't exactly cede the song over to the more popular version, but he changed his own performance to be more like the Hendrix version, basically covering a cover version of his own song.

For years I had no idea that this song by NIN on the The Crow soundtrack was a cover of a Joy Division track.
(That's a great soundtrack, even if they put the wrong version of Time Baby by Medicine on there)
There are so many covers of Valhalla Calling that are just fine because it's such a good song it's hard to mess it up. This one is equal to or just slightly better than the original though.
In 2012, Sabbaton covered "Twilight of the Thunder God" with a clean vocals instead of the growling of Amon Amarth. It really has a great Powerwolf vibe.
In 2017, Rage of Light did a cover of "Twilight of the Thunder Gods" with a mix of clean and growly vocals from Melissa Bonny and growling from Jonathan Pellet.
In the 'that didn't age well and was pretty yikes even at the time' department of what the fuck were they even thinking I present a cover that never should have been considered much less recorded and aired.

Can't forgive EC for introducing me to Schlager and getting Helene Fischer songs stuck in my head but maybe their upcoming Babymetal collab will do it.

This other fine specimen of Feuerschwanz has everything and the kitchen sink (and yet more Melissa Bonny):

Surprised to not see Postmodern Jukebox pop up, yet. (The Puddles the Clown isn't officially associated with them, just a guest, his own stuff is terrific including his cover of MCR's Helena.)
This version of All the Small Things completely changed my appreciation for it and Blink 182. Also, it's probably my favorite cover outside of Johnny Cash's Hurt.

Alright, today I'm quite in a good mood
Dress nicely and put on a hat
The Rolex ticks, oh how good do I look!
Get the thrill I absolutely need
Yeah, again a solo performance
In this poser outfit, I get myself comfortable
Get ready for bed, smoke sh*t
Where are the chicks with poser neckline?
Come into the club and enjoy the sight
This chick is nice and this one as well
I sing a hook which makes any of them going crazy
My wife's gonna give me an odd look if she finds out
Doesn't matter, I need to go to town from time to time
I'm no homemaker, I really need a drink
Which is worth it, get to the bar, I talk to a woman
Seven Mochitos for the lady and me
Suddenly I enjoy each and every song
I even dance to a song by Placebo
I'm drunk and the lady's drunk as well
Oohoohoo, you beautiful thing
I hide my wedding ring
Ding dong, we could get at it
But we only suck our drinks
You are Queen and I am King
When I see you I have to sing:
"Tingalingaling, you pretty thing"
We're drunk, we're horney
My wife's at home with the kids
At the moment I fight
The wish which everyone can see
Flashing up in my eyes
Hey man, what a cool chick
She says let it out
And she's fired up to get on it
I have to win time
Order some more drinks
She's not my kind
That's what I try to convince myself of
Ridiculous! I get lost in the drink
Bartender, get me some more
Of what's in the barrels
I'll drink it all because it makes me forget:
My thoughts are obsessed with sex
She wants to see the man being offensive
But I'm drunk, just looking at her
Little later my head lies next to the toilet
I'd never have bet
That puking would save my marriage
Madonna's cover of American Pie is, ironically, the worst thing to happen to music since the day the music died.
A trap is for fish: when you've got the fish, you can forget the trap. A snare is for rabbits: when you've got the rabbit, you can forget the snare. Words are for meaning: when you've got the meaning, you can forget the words.

There's a Youtuber I've come to enjoy, LittleVMills, who does metal covers of pop songs and things from video games.
I cannot emphasize enough how much I'm not normally a metal guy, but this dude's genuihe musicianship, singing chops, production values, and sense of humor really won me over. He picks good tunes, does them justice, and adds some nice visual touches and sight gags to the videos. He's not afraid to look ridiculous, which is always a plus.
I think my initial exposure was this appropriately insane cover of the "24 Hour Cinderella" karaoke song from Yakuza 0.

It was like this but daytime and the lead singer is now 7 months pregnant

Yeah, there are a couple great covers on that album, like Ghostrider and The Badge.
A favorite of mine because it's so stupidly silly - The Batman TV show theme by Voivod.

IIRC it had like 50 million views before 2020, and now it has like 300 million.

In 2009, Slaughter of the Bluegrass covered "Twilight of the Thunder God" in a folksy acoustic style.

edit: they also covered great songs by At the Gates, In Flames, and Dark Tranquillity. Then they were never heard from again.

he did one of "Planet of the Bass" that I...kinda think improves on the original?
"Down by the River" from Baldur's Gate III:
...and this cover of "Herald of Darkness" from Alan Wake II was what finally got me off my butt a few weeks ago to play that game and Control.
