And finally a plea:
Is there an actually good gaming podcast that focuses on things that are not the top of the Top Selling lists on Steam? I keep trying to find a general "talk about 10 different interesting games that came out recently" podcast and I keep finding people spending an hour and a half discussing the most popular game that came out this year. I want a critical dissection of Sorry We're Closed or something. Shut Up and Sit Down but for games.

This year Bob got a time machine that makes things 2013 from his future self so it's not hack to talk about Captain N: The Game Master on a podcast.
This is far from a secret here but Shelved by Genre is my fav pod of the last 2 years. Been reading along since it started. Another season starts soon, on Gibson.
Austin Walker may be the best podcaster of all time but here he is joined by academic heavyweights and it's both insightful and really funny.
Castle Superbeast is Pat (Stares At) and Woolie (Versus) from what was Super Best Friends Play doing gaming news and wild digressions for like 4 hours a week.

I listen to about 4 or 5 hockey podcasts and I'm on a kick with history podcasts (Rest is History, everything Dan Carlin, a few different series from Noiser).
I'm also listening to The 500 - a comedian is going through the Rolling Stone 500 Albums list from 2003. A different album with a different guest each week. About every third episode, he talks about quitting the show but he's powering through. Currently on number 180, so the end is in sight.
It's an oldie, but I still favor the now extinct podcast " Tank Riot".

Some of the podcasts I listen to have gotten somehow even worse with ads than before. They have a built in "break" for their own ads, but then the shitty general ones get inserted mid sentence or right after the regular ad read.

I have no idea what you're talking about. Of the dozen or so podcasts I listen to 2 of them have ads, and 2 or less ads for either of those.
It's a long story but the summary is a friend of his that died tried to get him to listen to all the albums on the list. So he started doing one album per week as an homage.
The podcast started around 2018 but I don't think he was aware of the 2012 rerank when he started.
The gulf between independent and "professional" podcasts is really getting wild

Interesting. I hadn't realized it had gotten so bad. The couple of podcasts that I listen to who I would consider professional (they do it for a living) are sustained mostly by patreon rather than ads.
