I do both to make the game easier in a certain way. Different ways! I started the DLC with low vigor, beat several bosses, and yeah gradually put more points in vigor. But I did that after maxing out my int (soft cap), getting a lot of endurance, and getting a lot of mind.
I could have bumped up vigor earlier, but I made the choice to do other stats. It was a choice though and lots of people do it the other way around. It didn't feel punishing or mean to make me level vigor, and really it didn't make me level vigor at all. My coworker is playing on new game +7 where his vigor is functionally like 5 relative to the damage enemies are putting out -- that's the way he plays and he had a blast with the DLC too.
That was fun and cool and not at all frustrating.

Most of your ideas are for improving a different game. This ones very cleverly designed as an open world. It may have a few issues with builds and variety for some people (obviously not all), but the solutions presented cause problems with the freedom of the open world. So, if I was designing an open world, they're out. Regardless of the cost to builds!
I honestly substantially think they'd make better builds, but a worse game. They're not bad ideas. They just don't fit here. I frankly wouldn't want to play that game all that much. I like the freedom of Elden Ring much more than the purity or elegance of its builds.
Honestly I think they know what they're doing here and its not really a mistake. Stones are everywhere you go, more linear health means you can level it gradually as you advance without it failing to keep up as a U would at the halfway point without harsh investment. You just add a bit more every now and again.
Some people feel the need to always pumpt Vigor to 60 softcap immediately, and some people never get enough of it. Some people find it a boring tax, some people find it a useless stat and get themselves in trouble. Frankly, that's fine with me. It's not a big enough problem to require huge overhauls to fix when its just as likely to have considerable downsides affecting the most important feature of the game.
Since it's a red flag with a rad pro-labor motto on it, it's been pretty firmly co-opted by leftists around here. If you see someone driving around with a red star vanity plate, you can pretty safely assume they have Opinions About Capital.

I wasn't having any luck killing Margit to get into Stormveil, so last night I spent a bunch of time exploring south, cleared Leonine Misbegotten which finally gave me enough exp to get my FP to 100 to summon my New Best Friend, Banished Knight Engvall.
Engvall in tow this morning, I Had Fun Storming The Castle, which taught me some very valuable lessons. I'm not used to stealth being a thing in Fromsoft games, but it was very useful! I thought I was never going to beat Godrick without more levels because he's a goddamn asshole who just AOEs nonstop, but I finally got the download in on him and finished him off. Made the terribly scary run to the tower to cash his great rune in. Did some more exploring, ran into my Newer Best Friend, Blaidd the Half-Wolf, who was like "Oh man, that dude at that evergaol was giving you some shit? Put me in coach, we got a score to settle." We fucking stomped him into the ground, he wasn't even able to act. And now I have what I have to assume is the most OP weapon obtainable on the first continent? I'm just rolling around scraping the map now and one-shotting anything that even looks at me.
