Samurai Western was released a few years back by a little company called Atlus, created by an even smaller one called Spike/Acquire.
They also created a fairly classic game called Rising Zan for the PS1, which I've never played, but is also supposed to be awesome.
Of course, the idea of Samurai Western is bringing a sword to a gun fight, and killing every cowboy in sight before they can even think of firing a shot.
Unlike most openings, this one doesn't exaggerate.
At many points, especially on the higher difficulties, Samurai Western can and will throw dozens of cowboys on screen, and a hail of never-ending bullets at the player.
The main character, Sojiro Kiryu, has the ability to deflect almost any amount of gunfire that comes his way, and can then proceed to dismember each and every varmit that was dumb enough to try and kill him.
He's not just in the west to kill idiot cowboys(though it's a perfectly good justification); he's also after someone.
Cast
Honestly, the story is the last thing that's important about Samurai Western, but it's there if you want justification for the endless buckets of blood Gojiro'll be spilling along the way.
The gameplay itself is nothing entirely new; run at enemies, slash them, and kill them.
Gojiro doesn't always have to kill his enemies by hand; with well timed attacks, he can deflect enemies' bullets right back at them.
What makes Samurai Western especially fun is the sheer amount of enemies that can die at Gojiro's hand in the span of a few seconds(especially when he goes berzerk), and the customization options.
With each level mastered, not only are there dozens upon dozens of ways to customize Sojiro's appearance and weaponry, there's also a good dozen or so unlockable characters, ranging from the main villains to random townspeople.
Offhand, a few random selections of gear that can be equipped:
Pirate Hat/Cape, Hockey Mask/Chainsaw, Angel Wings, Demon Horns/Demon Wings/Demon Tail, Samurai Helm/Leg/Shoulder Armor, Cat Ears/Tail/Paws(!?), Hopsy Mask/Paws(think Silent Hill 3), Boxing Belt/Gloves, Knight Armor/Leg/Shoulder, Guitar, Chimney, Locomotive, Steam Engine, Sheriff Badge, Lasso, Cowboy Hat/Boots, Bandana, Afro, Carnival Mask, Spectacles, Fox Mask, tengu Mask, Lute, Demon Mask, Umbrella, Parrot(essential for pirate gear), Throwing Star, Coffin, Monkey(!?), Hawk, Eyepatch, Shades, Noh Mask, & Flower.
Yes, there's more that I haven't found.
The difficulty also gets somewhat crazy on insane mode, which unlocks extra 'chapters' in between the main game(which is fairly short). More enemies, more on screen mayhem, and Sojiro dies a heck of a lot faster.
This is still my favorite action game for any system, especially the PS2.
Fortunately, unlike other Atlus games, it's still pretty easy to find, and probably on the cheap, so it's a fun diversion if you want to slice and dice some idiot gunslingers.

I've spent more time doing just that than playing the main game, and it's been fun, if incredibly frustrating.
Though more items also get unlocked by beating the default high scores on each stage/difficulty.
Extra 9 is a nightmare.
However, there was another awesome Samurai / Cowboy cross over made during the PSOne era, but this one had almost God Hand like zaniness. What was this incredible melting pot of all this awesome? Rizing Zan mother fuckers.

The coffin is one of the more awesome looking items, because there are a pair of glowing red eyes that are visible through a slot on the coffin lid.
Rising Zan Samurai Gunman had more and better cutscenes.
I remember that Samurai Western had a 2 player mode.
I don't remember anything about it, for some reason.
All beat'em ups should have a co-operative mode.
Time your button-presses just right and the cowboy ends the combo by spitting into a spittoon just off-screen and rolling a cigarette.

Samurai Western's 2-player mode is awful. It's on one screen, and it's focused on 1p just like in the singleplayer game. So 2p can just run around off-screen and get lost and shot up. That happens really easily.

The best thing Red Dead Revolver had going for it was how much emphasis it put on creating a dirty, beautiful spaghetti-western style experience - it really nailed the Sergio Leone style, particularly with that excellent cinematic when you first load the game. The combat wasn't bad, and it was great for letting you feel the weight of the shots. The art direction and character designs were excellent, and I liked the little touches like if you just miss a headshot, you'll blow the guy's hat off. But if you land it, you're rewarded with a satisfying, dark spurt of blood. All that said? 6/10. I really didn't like the character-switching, and the linearity of going from stage to stage was a kick in the teeth when you realized you would have to play through the whole game to get back to that one level you loved (for me it was hunting down Bad Bessie in the mountains - beautiful level! Great for sniping with the rifles.)
If you're in the mood for a western, I say go with GUN. Its hard to nail down why, because unlike RDR the character designs aren't quite as awesome. It goes for more of an epic-western than a spaghetti-western feel in terms of the music, and the only weapons that really have a good feel to them are the bow and shotgun. However, I don't play my copy of Red Dead anymore - when I'm in the mood for a western, I always reach for GUN. It achieves a much better story than RDR, the open-world you get to travel around is seriously beautiful and well-designed, it has characters you come to care for and... hm, lemmie think about this statement... yeah, it does have the best voice work of any PS2 game I've ever played. Oh wait... no, San Andreas was better - but only because San Andreas had Charlie Murphy, James Woods, and takes 40 hours to get 100% on. Gun's far from perfect, but it nails everything it tries to achieve - it's an epic, brutal, beautiful adventure though the old west.
I do like Red Dead Revolver - it's in my collection, and it's not going anywhere. But I can't say I'm gonna' rush out for Red Dead Revolver 2. Gun 2 would be a day-one purchase.
Edit: Samurai Western is very cool and a lot of fun, but it can get repetitive. If you don't think the idea of a samurai killing cowboys is enough to keep you interested, it may not be for you. On the other hand, you can find it for less than ten bucks in EB, I think, so it's not a huge risk.
Edit edit: I didn't mean to make it sound like headshots in Gun aren't satisfying - they are. Particularly when it's the head of a horse that crumples under its rider, throwing the sap head over-heels from its back. I'm not supporting violence against animals, but it's sweet.

I think the story is epic, the setting comes close, the music is certainly sweeping and yadda yadda yadda. God of War was absolutely frickin' epic and it's about the same length (apples and oranges, I know).
Anyway, I didn't mean to turn this into the GUN discussion. I just wanted to say Red Dead Revolver ain't bad but sure ain't great, if you want (what is probably) the best Western game, GUN's a good bet.
Edit: I should note, neither Gun or RDR let you wield katanas.

Yeah, it gets repetitive, but so do a lot of games when completely new features (or storyline twists) aren't unlocked... and that's basically what this game was. A game where the only thing that you really did obtain, was more swords with a few different nitches.
But hell, for the times you played it, it was friggin' awesome.
It's like when people watched the Matrix movie for the first time: It looked so awesome.
Then if you watched it again: It's coo.
Then again: Coolness.
Then again: Coo...
Then again: Heh...
Then again: Why aren't we watching something else? O_o
The tactic to make this game perfect for you: Play through it twice. Then drop the game. Then don't pick up until a year later. You'll remember just how awesome it was since you first played it.
Oh, and I loved Way of the Samurai and Way of the Samurai 2.
Way of the Samurai was epic.
Way of the Samurai 2 was just cool.
I miss the precise blocking that was in the first one, and I miss how epic the final battle was in the first one... the second one just had more swords and more theatrical moves, not to mention the costume pieces.
Way of the Samurai 2 was just crap. Too many loading screens, too little direction. I had no idea what the fuck I was supposed to be doing after about twenty minutes. Never did figure it out

Simply put: You're supposed to go to somewhere... end up there... and er... talk to people 'til you figure what the hell was going on.
But I did enjoy Way of the Samurai 2 because you'd get stalked by ninjas at night... or run into a crazy ronin who has an amazing sword.
In all-honesty, the thing that made me like Way of the Samurai 2 was the theatrical-fights I'd have with people.
