You could go into the publishing industry. My mom got a bachelor's and ma at NYU in english and worked as an editor for a company.

My mom worked in the publishing industry, and from what I've heard, it's not a great idea. Everybody who wants to write uses publishing as a backup plan. There's not a whole lot of opportunity for advancement; essentially you're likely to get stuck in a pink-collar job. YMMV, of course.
If I were an English major, my backup plan would be teaching; a private school teacher, at least, has a nice life, and you get to be around kids.

If you are particularly interested/good at the mechanics of English, there is also the option of being a technical writer. This does not necessarily mean just writing manuals for software or whatnot, but also drafting requirements for software projects, standards, and other assorted foundational documents for a company that do not fall under legal.
We have a pretty good number of them at my company. They do OK in terms of pay, and it would probably be good experience for more desirable English positions as you are at least demonstrating experience in writing clear, cogent, organized documents.
I think Orson Scott Card did this. Wrote Windows manuals and the like.

English major by day + hacker by night = no trouble finding employment while you work on the Great American Novel.
