I am planning on picking up a game on Steam for my dad as a gift. He doesn't have an account though, so would it be possible for me to just log him onto my Steam account on his computer, and have him play it through that? Or would there be any real advantage to getting him his own account?

Only one person can be playing a game on a given account at a time. It is possible to set up Steam Family Sharing, which I believe would allow both of you to play but only one of you can play the game at any given time. See http://store.steampowered.com/sharing/ for more details.
My recommendation would be to buy the gift and send it to his email so he can set up an account. At the end of the day it'd be the easier solution.
Goddamnit @Berylline got me with A Wizard's Lizard, which looks amazing. I thought we were on a team here! Berylline also told me to mention to you guys (Especially @Antoshka who has 2 hours to designate) that she LOVES streaming and really wants to hit the 24hour goal with our marathon. You could give him his own account, but family share to yours, so he'll still have access to your library, but be independent.

Honestly, if a person is even going to play one game on Steam, they might as well have their own account. That's one of the reasons my wife got an account.
