Singapore recently got Tiger Sugar, one of the trendy new bubble tea shops from Taiwan, which it turns out is laser targeted directly at my personal tastes.

They specialise in a rich brown sugar milky tea thickened slightly with cream and served with pearls soaked in some other odd brown sugar syrup of some sort, and it’s so good.

    9n6qh0ju7ah6.jpeg

The only thing stopping me having one with every meal every day is the ridiculous hour and a half wait for your order, due to the entire population of Singapore queueing up to buy packs of 6.

I never had this variant until about two years ago, it will kill you and you will love it the entire time you are dying.

The “vanilla” version here has no tea at all, it’s just milk and tapioca and basically treacle.

There is a matcha variant that is heavenly.

Continuing the topic of me hurtling wildly towards an early death, it’s that time of the year again where I talk about how much I freaking love butter sugar toast.

    wjsuovyzxz9o.jpeg

It’s so simple and hits me right in the childhood and it’s so good.

Holy crap, they serve that in restaurants? I haven't had that since I was a tyke.

Although in our case it was Country Crock and sugar bread, because I came up in a real weird time for butter.

Yeah, I’m normally a conservative butter user, but when it comes to sugar toast that business has gotta be in slices.

Fake edit: Ah crap yeah, I didn’t even think about the shirt. Being a white dude, I’m not even going to attempt to defend it, outside of saying that my wife is very proud of her Singlish so it was extremely her shit. It’s definitely not something that could be worn in many other places.

    Speaking of Maccas

I had a work emergency in the middle of this intensive training I was doing last week and I had to find somewhere to sit with my laptop, and the only place in the whole building was the McDonald's in the basement.

I went to buy a black coffee so I had an excuse to occupy a table, and I ordered from a very nice, very old lady. "One black coffee please." To which she said, "White coffee." And I said "Black coffee?" And she nodded and said "Yes. White coffee." And rang it up and said "White coffee," one more time, just in case it wasn't clear that what I was getting was going to be white coffee.

So, basically I'm in love with this old lady now. She did not give a fuck.

Don't know when the switch happened, but I grabbed a Ham and Turkey sandwhich at 7-Eleven tonight and the generic slice of turkey is now "garlic peppercorn turkey" and it was pretty good.

Important question, Baf Dood Thread: what is the appropriate stuffing for a jalapeno popper? We got into a knock down drag out fight about this at work and came to no solid correct answer.

Meat, cheese, and some kind of grain like couscous or quinoa can all work well. Cheese is the canonical one.

How are the poppers to be cooked? I know, traditionally, they're breaded and deep fried. But I've also seen poppers that have been baked, done on a grill and smoked.
Different methods would call for different fillings, I'd think.

Id think they all get fried first unless you use dough or something

You could also smoke all the individual components of a popper ( well not the cream cheese)

The ones I've smoked generally have the peppers cut in half length wise, filled with a cream cheese/grated cheese mixture then either wrapped in or topped with bacon before going in the smoker.
Pretty sure we used cream cheese and cheddar for the cheese, there may have been some herbs in there as well. Put them on the smoker for 30-45 minutes (however long it takes the bacon to be done).

You may want to line them up on a wire rack to prevent rolling.

I did poppers with a cream cheese and sharp Cheddar mix. Added bacos and chives, mixed it in a bowl.
Cut the peppers 1/3 off lengthwise, stuffed them, then baked until melty.

Not very fancy, but accomplished what I wanted.

though I recently threw out a nice sized pork bone I had in the freezer because I couldn't remember when I put it in there or how long they would last

I don't usually save bones from meat I've actually cooked but I will save them from anything I've butchered beforehand

like chicken spines and thigh bones
