I read an article suggesting that separatism is popular in places because folk feel disengaged from the existing political structures and wants to try something else. I think they have a point.

Using sterling is different from having control over sterling_ which they currently have. Using someone else's currency without formal mechanism to influence it seems like a risky move.

That's literally what we had with the last big referendum on Quebec separation back in the 90's (50.58 no, 49.42 yes).
The 1979 poll had a rule where 40% of registered voters had vote for it, not just a majority of participants in the referendum.
So while 51% of folk were in favour of it, they only reflected 32% of the population and thus the proposal not carried out.
Methinks turnout could very well be a factor here.
