Carollo said Williamson "misspoke on that. The ball was not moving."

I can kind of see how they might make that call. To start, watching it full speed instead of super slow motion, it's so quick it does look like a dropped pass. And we know they do make that speed difference a factor in close call decisions. Then you have the whole "process of the catch" rule vagueness/interpretation. He has the ball in his hands, but is immediately being tacked. Since he's not advancing the ball upfield and if they thought he wasn't making any moves to avoid or break away from the tackle, if they believed both of those then he should also need to maintain control to the ground to complete the catch, which he didn't do. So that's likely how they came to reverse it, rightly or wrongly.
And in general I'd rather they let those types of things play out as a fumble and reverse on replay than them blowing it dead immediately and seeing it should have been a fumble on replay.
Just remember that half the people you meet are below average intelligence.

He grips it, he takes a couple of steps, and then it is stripped. So if you want to say he's not advancing the ball that's fine but don't say anything about the ball being loose.
