    Just made pork chops. Never did them in the skillet before. They turned out okay I think. Could have used a little something. Not sure what. More onion powder maybe.

    Making jambalaya for the first time. Combined chicken, andouille sausage, onion, mushrooms, and diced tomatos in the crockpot. No Cajun seasoning here so I used pollo instead. Recipe calls for shrimp to be put in the crockpot after the other ingredients have been going to six hours on low. Gonna have brown rice to go with.

    Hopefully this turns out alright.

    Skillet is my go to if I don't know how to make something. Don't know what to do? Grab some fat, punch the heat up on an iron skillet, see what happens.

    I usually Broil them. That is pretty idiot proof.

    So lately I've been trying to eat healthy and I'm monitoring my calories. One thing that I really do miss after a couple of weeks of keeping my diet in check is stuff like potato chips and cheetos. I've bought some bags of plain and lightly seasoned popcorn (like 40-60 calories per cup) to fill that void, but I'm thinking I'd like to make it at home in an air popper. That way I can experiment with my own seasoning and not have to worry about calories as much.

    I'm having trouble finding advice on how to get dry seasoning to stick to the popcorn without resorting to butter or misting the popcorn with oil. Misting wouldn't be awful, but I'd like to avoid adding extra calories. I could do something like hot sauce + taco seasonings or Old Bay, or maybe lemon juice? But beyond that I am coming up blank with methods for getting the seasoning to stick. Maybe just a little salt-water mist?

    Jambalaya turned out fantastic. I was doubting the shrimp would be done in ten minutes in a slow cooker on low but wow they were perfect and so was everything else.

    So I have to finish the identification completely but it appears that a friend's dog found us a patch of truffles. I know nothing about truffles but will hand it off to internet friends. I read that truffles need microscopic identification often. Might not even be a truffle but we'll find out.

    At least by comparison to a lot of pictures and what I've seen in person. Still...you'll want to get it confirmed.

    From what I read many types are not considered to taste good. It is a relatively under-explored field.

    Butter.

    Someone told me to put the truffle in a sealed container alongside a pound of butter to infuse the flavor so we can decide if it is good or meh.

    Speaking of mushrooms, I recently chatted with another Swedish dude about Giant Puffballs. Apparently there is a field near his parents' summer home that is basically crawling with them, sometimes in the dozens.

    I highly recommend a google image search. Apparently their taste is somewhere in between tofu and melted cheese when cooked. I am so frikkin jealous.

    I've never done roast garlic before which took longer than I expected, and cooking the "patties" of basically mashed potatoes was tricky, but worth it

    I'm looking to pick up a stand alone steamer/milk foamer. Neither the girl or I drink coffee, but there is something nice about foam once in awhile and since her birthday is coming up.

    Anyone have any recommendations?

    yeah we just haven't gotten around to it.

    I should though since It makes making certain foods a breeze that we just haven't bothered with in a while.

    It finished baking around 11 PM, and I posted the picture on Facebook to brag. Two of my flatmates saw the photo and got out of bed to have some.

    When I woke up for breakfast today, there was just a tiny little piece left, which I stole with me for lunch at work.

    So now that I know I have celiac, I have to cook more, which is good I guess. BUT almost all my pans have got to go because they're contaminated, so I feel like a massive financial burden. I guess I'm gonna look on the bright side and say hey, a good chance to get some decent cookware and stuff! Also a smaller cast iron pan, because my cast iron pan has DEFINITELY been glutening me over the last few months now that I know for sure that's what the feeling is. Our oven doesn't get hot enough for me to feel like I can strip it properly so I'll probably just donate it to salvo or something and replace it with something a little smaller. My sister took me out for dinner tonight and even though I ordered something specifically gluten free, it feels like I got some gluten somewhere.

    I know there are some people here with food allergies, how do you handle going out to dinner with a food allergy? Do you ever quit feeling like an asshole when you have to be like "no, really, I really really need this to not have x item on it"
