WHAT IS THE BEST CHEESE TO USE WHEN CRAFTING A GRILLED CHEESE SANDWICH

Raijin QuickfootRaijin Quickfoot I'm your Huckleberry YOU'RE NO DAISYRegistered User, ClubPA regular
I just had an awesome grilled cheese sandwich made with havarti and it was creamy and melty and the cheese stretched for like a mile.

Got me thinking... I think havarti is my favorite grilled cheese cheese. I wonder what everyone else's is?

Provolone has too mild of a flavor for me to use it in a grilled cheese

It's fantastic in, like, sandwiches and whatnot but it can't be the centerpiece of a meal for me

Are there more interesting cheeses that I could use? Sure.

American cheese is my childhood nostalgia favorite though.

    Isn't Gruyère expensive in America

Gruyère from Switzerland is expensive over here

Seems like an odd choice for a grilled cheese sandwich

Variety is the spice of life, bud. Same goes with bread.

I don’t often make a straight up grilled cheese anymore. A little rosemary ham and provolone whoops ass. Little carmelized onions and brie.

But plain white bread, American cheese and a bunch of ketchup is pretty perfect.

    Which part? The ketchup?

Because I’m gonna dunk that fucker in ketchup. That, and fries, is what ketchup is for.

I mean, traditionally you dunk the cheese into a bowl of tomato soup so I guess ketchup is in the same sort of general direction

I prefer shiny plasticky american for home made grilled cheeses. For restaurant grilled cheeses any are good.

Except one. The one time I had a grilled cheese at a restaurant and thought "well, that was not good cheese" was when it came with a blue cheese.

Grilled cheese is almost the only time where american cheese is first choice. It's just got the right melting point as compared to grilling time on your more standardized sliced bread. Other cheeses become more preferred with breads that deviate from the norm and toast differently.

    Cheddar
Cheddar is my go to. Cheddar cheese (generally a cheap extra sharp, as that's what I stock my fridge with), sourdough, maybe a touch of mustard, and butter.

I use mild cheddar, but that's just because that's the cheese I have for general use.

I do put a layer of cream cheese on the inside of one of the bread slices though.

We usually use Colbyjack cheese, though that's probably more because it's our general go-to cheese we keep on hand.

I did not vote because the real answer is a combination of around three cheeses of varying types.

I had no idea that wasn’t what everyone did. It’s how I was raised. Grilled cheese and ketchup.

I was a line cook for years so now I just keep all sorts of stuff prepped in the fridge. Carmelized onions are always on hand, as well as lots of other sautéed stuff, roasted whatnots, dips/sauces. Just slap it together and put it in a pan. I’d never do all that just for one sandwich.

Grilled cheese was not a part of my childhood and I'm in no way attempting to replicate that when I make it

Like, I get that american cheese grilled cheeses are a nostalgia thing for a lot of folks

But that's not a universal experience, and trying to say that it's the only way to make grilled cheese always feels very weird to me

Grated cheddar with a little bit of French mustard, black pepper, pickled Jalepenos and paprika mixed in.
