I just had an awesome grilled cheese sandwich made with havarti and it was creamy and melty and the cheese stretched for like a mile.

Got me thinking... I think havarti is my favorite grilled cheese cheese. I wonder what everyone else's is?

    I don’t often make a straight up grilled cheese anymore. A little rosemary ham and provolone whoops ass. Little carmelized onions and brie.

    But plain white bread, American cheese and a bunch of ketchup is pretty perfect.

    I prefer shiny plasticky american for home made grilled cheeses. For restaurant grilled cheeses any are good.

    Except one. The one time I had a grilled cheese at a restaurant and thought "well, that was not good cheese" was when it came with a blue cheese.

    Grilled cheese is almost the only time where american cheese is first choice. It's just got the right melting point as compared to grilling time on your more standardized sliced bread. Other cheeses become more preferred with breads that deviate from the norm and toast differently.

    Cheddar is my go to. Cheddar cheese (generally a cheap extra sharp, as that's what I stock my fridge with), sourdough, maybe a touch of mustard, and butter.

    I was a line cook for years so now I just keep all sorts of stuff prepped in the fridge. Carmelized onions are always on hand, as well as lots of other sautéed stuff, roasted whatnots, dips/sauces. Just slap it together and put it in a pan. I’d never do all that just for one sandwich.

    Grilled cheese was not a part of my childhood and I'm in no way attempting to replicate that when I make it

    Like, I get that american cheese grilled cheeses are a nostalgia thing for a lot of folks

    But that's not a universal experience, and trying to say that it's the only way to make grilled cheese always feels very weird to me
