we rely predominantly on sight, but sound provides important cues for things that are going on outside our visual range
that's the big limitation with vision, you have to actually be looking at stuff to see it

In this hypothetical situation it is a simple case of numbers. Most of us use taste the least often and therefore value it the least. Though I guess if you eat a lot maybe it ranks higher.

Clearly ideally I wouldn't give up any sense, but discussing a hypothetical scenario where if forced to which would you choose, taste seems like the obvious choice. You lose least from your life.

If an ornate carved oak table is about to fall on my head, I see it and move out of the way. If a car is coming up behind me, I hear it and dodge. If I smell a fire or gas I vacate the area and similarly if I touch something hot I stop touching it.
Other than stopping you from eating poison taste is low on the priorities here. If anything it would help as much as hinder by allowing you to eat more variety without concern for personal preference in flavour. Think of all the sprouts you would eat.
My justification for losing smell is that you have far less control over it than taste and so bad smelly things would happen upon you more than bad tasting things.
