Realistically at this point we're just talking about an unofficial PAX anyway, in the tradition of Dirty South PAX or FloPAX. I don't think there's really a demand for a new actual show right now especially.

Forget the convention center, focus on the burgers.
I would absolutely just hit up my old haunts. (Well, whatever's still standing after covid -- since returning, I have yet to visit my parents due to circumstances, so I don't know the current landscape.) Screw the burgers, pho and banh mi all day errday. (OKC does have excellent food, burgers included.)
I think more than being physically central, a bigger element would be how cheap and how long would the flight be to get there, since that's how most of us would be getting there anyway.
That's what makes Vegas such a good choice, it's pretty easy to get cheap flights there from just about anywhere. Same goes for all the major hubs like Dallas, Chicago, etc and nearby stops. Not sure if that applies to OKC or Wichita, though.
Yeah direct flights to Vegas are available from basically everywhere, and it has hotels and food that range the entire gamut from about as cheap as they get to about as expensive as you want.
Also, like, where else do they have 24-hour buffets? Fuckin' nowhere.

Montreal would genuinely be a great pick given the size of the city, accessibility, costs being pretty decent in general, lots of accomodations, and being right next to a significant amount of indie and AAA developers
But it's in Canada so an official PAX prrrrrobably won't happen and they'd just do fuckin', Vermont or something
I'd say Los Angeles would be a good PAX location since there's lots of stuff to do. The problem is that I don't know what any of it is because I never leave my lair.

Wasn't it kind of a thing in past years where people attending PAX East had a deadline to leave once it was over on account of a monstrous blizzard moving in
LA/SoCal does have a lot of interesting cool things and people if you know where to look, but it is such a gigantic pain in the ass to get anywhere and find the cool things that I can't suggest it to anyone in good conscience
Really though, my partner's favorite food is burgers (though now we know he's Celiac, we have to be much more selective when we eat out), so lemme know if you want his Tulsa-native recs; we also have the occasional hobby of finding our personal Top Restaurants in Category, tho I was mostly vegetarian when we lived in Tulsa.
But even before we met -- my dad used to sling burgers as his first job, and my family are foodies because Food Is Love and we're Southern, so we've got opinions on eats wherever we land. So my holy grail hometown burger joint is, of course, no more: Coit's Root Beer Stand. Oh my God, that root beer. And onion rings. The burger must have been fine, a squashed-style patty iirc but not too dry or greasy; I feel like the bun was pretty good, too. But that frosty mug of (endless!) root beer meant it was one of my favorite restaurants.
A&W does not come close. Root beer and sasparilla are categorically first --with orange Fanta/ne-hi a close second-- for my favorite soda, and I could tell when the formula for IBC (my original fave) changed to be much sweeter. I've gotten sampler packs from POPS just to try more varieties, so while I wouldn't say I'm recently or that broadly educated therein, I like root beer, and just remember really loving Coit's.
Nic's Grill is a classic greasy burger but way too crowded, moreso, tourist-flooded since getting featured nationally a ways back.

But seriously, outside of New Orleans, I couldn't think of a better city to have a (Southern) meet-up. There's a ton of Hotels (And I could even probably arrange a discount block rate), an amazing food scene, and great night life. Also there's no open container laws so you can drink wherever you want.

As someone who just yesterday returned from Las Vegas, I can say that I would absolutely go back right away if I could. Mid/late April seems to be the best weather, between 70 and 80, with a bit of a breeze. We stayed on Fremont at the Golden Nugget, but I think a motel a few blacks away would be the better option next time.
If Texas, I feel your pain, I'd never lived in a city that was all suburb until then. If Kansas, I believe you.
