I would give up my sense of smell. Food wouldn't be as flavorful, sure, and I would lose out on perfumes and whatnot, but your sense of taste isn't entirely decimated along with the loss.
Aren't taste and smell, like, the same thing? Like when you get a nasal infection you can't taste a Goddamn thing?
That said, I'd probably give up sight if I had a choice. Sure, I like seeing things, but I like music too much, and my vision is already getting blurry. I'll miss video games, but I'll just invest the money spent on computers and games into a grand piano instead.

Taste and smell are heavily correlated, but I dont think I have a very good sense of smell to begin with. I have never had problems with food tasting bland when I had a cold or sinus trouble. People say it happens but I don't understand it ... I tend to mistake the scents of foods for vastly different foods and completely inedible products for something cooking, roses aren't particularly odorous (why would you want to smell roses when there are little bugs hidden in the petals?) ...

I'd ditch taste. I could then craft my diet entirely around health benefits. I mean, don't get me wrong, I would totally miss tasting great food, but given the choice, losing taste has the biggest upsides.
Speaking as someone who has a very diminished sense of smell as of late, you won't want to give it up. You lose so much sensory information you don't even realize you had, it's really distressing.
You use taste maybe 3-4 times a day. You use sight every single waking moment of your life. Sight enriches my life, a wonderful vista, paintings and art, the faces of the people I love - reading emotions seeing them smile.
You would give all of that up for the ability to taste food, most of which is probably horrible anyways.
That is so alien a concept to me. I mean, of all the main senses I would be willing to give up, if I was forced to, taste and smell could go immediately. I mean shit, my friend has no sense of smell because she was born with it
